We love this very simple and classic Chèvre and berry salad. We try using the highest quality ingredients to be paired with our fluffy Chèvre. Substitute the strawberries for any fresh berry, and substitute the lettuce and/or spinach for any fresh greens! Below are two easy and delicious dressing recipes to try for variety this summer.

INGREDIENTS
1-6 oz. bag Baby Spinach
1 cup fresh Strawberries, sliced
½ cup Candied Pecans
⅓ cup Balsamic Vinaigrette (can use bottled, but prefer to make Stepladder Creamery’s recipe for Herbed Balsamic Vinaigrette) - see recipe below!
½ cup Stepladder Creamery Fresh Chèvre, crumbled
Kosher Salt and freshly ground Black Pepper, to taste
INSTRUCTIONS

In a large bowl, combine spinach, strawberries and pecans

Drizzle balsamic vinaigrette over the salad, season with kosher salt and black pepper and toss well

Plate salad and top with crumbled Stepladder Creamery Fresh Chèvre

Herbed Balsamic Vinaigrette dressing
- 3 parts Olea Farms arbequina olive oil
- 1 part Olea Farms traditional balsamic oil
- 1/2 teaspoon dijon mustard
- 1 whole lemon juiced
- 3 medium garlic cloves finely minced
- 4 large basil leaves finely minced
- 3 springs of curly parsley fine minced
- Fresh ground black pepper to taste
- Salt to taste
- ½ cup balsamic vinegar (Sigona’s aged 12 year)
- ¼ cup olive oil (Olea Farms european blend)
- 3 tablespoons red wine vinegar (Sigona’s)
- 2 cloves of garlic
- Salt and pepper to taste
