Marinated Fromage Blanc is a staff and customer favorite. The creaminess from the cow's milk makes this cheese delicious on its own but also can elevate family recipes, especially dips.

- 1 Jar Marinated Fromage Blanc
- ¼ Cup Creme Fraiche
- 1 Head Garlic
- 2 Tbsp Extra Virgin Olive Oil (EVOO)
- 1 Sweet Onion, rough chopped
- 2 tsp Fresh Thyme
- 1 Cup Stock
- Black Pepper and Kosher Salt
- Preheat your oven to 400F. Slice your head of garlic in half latitudinally. Pour some of the olive oil from the Marinated Fromage Blanc on both halves of the cut garlic and place in a piece of aluminum foil large enough to wrap around the entire head, pouring in the remaining olive oil from the jar on top. Place in an Ovenproof dish and bake for about 40 minutes, or until the garlic is very soft. Remove from the oven and allow to cool. Save the oil from roasting the Garlic.
- While baking the garlic, in a large sauté pan over medium heat, add the EVOO and sweet onion. Sprinkle with salt, stir, and then cook lidded. After 10 minutes stir, add a ½ cup of stock, and cook uncovered, allowing the stock to evaporate. Add the remaining stock and 1 tsp fresh thyme, scraping up the fonde. Cook for about another 10 minutes or until the stock has evaporated and the onions are well caramelized. Remove from the heat.
- Save 1 Tbsp caramelized onions and 2 cloves of roasted garlic for garnish. In a blender or food processor, add the onions and 6 cloves of roasted garlic. Pulse smooth and then add the Fromage Blanc (remove the bay leaf and chile from jar) and Creme Fraiche, pulsing until everything is well combined and smooth. Add salt and black pepper to taste.
- Spread into your serving dish and top with the reserved onion, garlic, the remaining fresh thyme, and a drizzle of olive oil from roasting the garlic. Serve with crostinis and crackers.
