Our cheesemaker, Robin, and production manager, Ryan, are both former brewers, so they bring a special passion for blending these two worlds.

Cow’s Milk Semi-Hard Cheese | Washed Rind
The Encore is our take on a Raclette-style cheese, known for its distinctive aroma and superb melting qualities—ideal for a cozy fondue night or melting on nearly anything! With its funky, fruity aroma, it’s a standout addition to any cheese board.
What Makes It Special?
The Encore was crafted with a beer wash in collaboration with our friends at Firestone Brewery in Paso Robles, CA. Right after it comes out of the cheese press, the young cheese is washed and smeared with a mix of Helldorado beer, brine, and a culture called Brevibacterium linens (or B. linens). The Beer, Helldorado brings rich, sweet honey and vanilla notes up front, with a toasted malt finish that deepens as the cheese ages. This continuous washing process during aging helps develop the cheese’s distinctive rind flavor and its signature orange-ish color. Made in the style of a French Raclette, The Encore is aromatic and unique in every bite.
Tasting Notes:
Look for fudgy, creamy, and salty flavors, with layers of lactic, earthy, and meaty notes. There’s a hint of mushroom, sweet honey, vanilla, and a touch of fruitiness to round out the profile. And don’t skip the rind—it’s completely edible and adds even more depth to the experience.
How to Enjoy:
Raclette-style cheeses are made for melting! Traditionally, they’re warmed by the fire and scraped over vegetables, but we also love it melted over crackers with a cold beer on the side!
