This season’s exclusive: Cambria Heatwave
This is our Stepladder take on Pepper Jack. We start with a rich, creamy base, then hand-mix in crushed Calabrian chili peppers and Pasilla Negro chili powder before finishing each wheel with a smoky, sweet chili coating. The result is a mildly spicy, milky cheese with a savory, peppery depth.

Our other cheese picks for the season offer comfort, versatility, and plenty of flavor for cooler days. Each one pairs beautifully with fall’s deeper, richer ingredients — think roasted vegetables, hearty grains, and orchard fruits.
