Bacon-wrapped dates are a classic appetizer for any gathering. We like to add a little bit of Cabrillo for an added pop of flavor.

Cabrillo is our Spanish-style cheese created from a blend of goat and cow milk named for the iconic Highway One that runs along the rugged California coastline minutes from our farmstead. It has a rich, nutty character that pairs perfectly with the sweetness from the dates and crunchy, salty bacon.

INGREDIENTS

  • 8 slices thick-cut bacon
  • 16 dates, pitted
  • 1 small wedge (or ½ large wedge) Stepladder Creamery Cabrillo, rind removed, ¼’ dice
  • 16 toothpicks

 

INSTRUCTIONS

  1. Preheat oven to 350℉

  2. Slice dates lengthwise on one side and remove pit (if not pitted)

  3. Fill date cavity with diced Stepladder Creamery Cabrillo

  4. Slice bacon strips in half

  5. Wrap each date with bacon and secure with toothpick

  6. Bake for 10 minutes, carefully turn dates over and bake for another 8-10 minutes, until bacon is golden brown and crisp
