Made entirely with fresh fruit from Stepladder Creamery! We love using a mix of whatever citrus is in season. Many of these unique varieties can also be found at Bay Area farmers markets.
Ingredients
- 4 passion fruit
- 1½–2 cups fresh mixed citrus juice (about 5–10 citrus, depending on size)
- Our favorite combination: 1 Ruby Star grapefruit, 3 New Zealand oranges, 1 large Lisbon lemon
- ½ cup Stepladder honey
- Pinch of Himalayan pink salt
- 6–8 cups cold water, to taste
Instructions
- Scoop the pulp from the passion fruit and place it in a blender. Pulse a few times to help separate the juice from the seeds.
- Strain out the seeds and reserve the passion fruit juice.
- Juice the citrus and combine with the passion fruit juice.
- Add the honey and a pinch of pink salt. Blend for about 45 seconds, until the honey is fully incorporated.
- Pour into a large pitcher and add 6–8 cups of cold water, depending on how strong you like your citrus-ade. (We find that about 4 cups of water per 1 cup of juice creates a bright, refreshing balance.) This ratio is consistent with many classic citrus-ade recipes.
- Taste and adjust with additional honey, salt, or water as desired.
Serve well chilled over ice.
Notes
- Sweeter citrus varieties may need less honey.
- A small pinch of salt enhances the fruit flavors without making the drink taste salty.
- For a sparkling version, replace half of the water with sparkling water just before serving.
